The Empire Tea Loaf - Recipe


  • 350g Freshly Boiled strained Empire breakfast tea
  • 350g mixed dried fruit
  • 2 medium eggs
  • 200g light brown sugar
  • 250g self raising flour
  • Butter (for greasing)

Prep: Overnight

Bake: 1 to 2 hours 

1) Soak your fruit

Take a large bowl, then fill it with your mixed fruits. After that, pour your freshly brewed Empire Breakfast tea. You want to leave the fruit soaking in your tea for as long as possible (we recommend overnight) so that all the tea can get soaked up, leaving you with juicy tea-infused fruit!

2) Pre-bake

In the morning following the fruit soaking, preheat your oven to 160℃ (fan-assisted). You can pre-grease as well as line two loaf tins with baking parchment. It is very important to make sure you’ve dressed every nook and cranny on the tin, as you wouldn’t want to damage your cake over such a small detail!

3) Making The Mixture

Now it's time to make the mixture! We would like to point out you DON’T need to remove any of the tea from the bowl. All you need to do is add the 2 medium eggs to the tea-soaked mixed fruit, followed by your sugar. You then need to mix thoroughly to ensure all ingredients are incorporated..

You can then add your flour and incorporate this into the fruit mixture. Like before you need to mix thoroughly to prevent pockets of unmixed flour (isn’t the nicest bit to bite into).

4) The Bake

After mixing, you just need to pour the mixture evenly into the prepared tins and bake for 50 – 55 minutes (or until a skewer inserted in the centre comes out clean). Remove from your oven and place on a wire rack to cool completely before taking them out of the tins.

This tea loaf tastes fantastic with butter or cheese and complements a cup of breakfast tea amazingly well!
